Sugar coated prunes recipe
- Cover the prunes with water in a bowl and soak for 3 hours. Drain them and reserve the water.
- Put the prunes in the pressure cooker along with the sugar, the wine, the Marsala and the cinnamon. Close the pot and pressurize it at high heat. As soon as the valve rings, reduce the heat and cook the plums for 7 minutes.

- When the cooking is done, turn heat off, allow steam to escape and open the pot. Place the prunes in a serving dish.
- Pour 60 ml of the soaking water in the pot and allow boiling for 5 minutes so the syrup thickens. Once cooled, remove the cinnamon and pour it over the prunes.
- Sugar coated prunes are delicious; they can be eaten immediately or lukewarm, along with dry biscuits.
- Option: cook the prunes for 7 minutes, previously soaked in 250 ml of white wine, 75 grams of cane sugar, 2 orange peels, a vanilla stick and a cinnamon stick. Place them in a dish and serve lukewarm or cold. The go well with vanilla ice cream.

- 100 g of sugar
- 200 ml of red wine
- 50 ml of marsala or Oporto
