Seitan Wheat gluten recipe
Seitan is a wheat based Asian preparation that contributes a large amount of protein, for which it can be used to replace meat. Preparing seitan requires a certain amount of car, but the pressure cooker shortens the cooking time noticeably.
- Sift the flour in a wide bowl and add half the salt.

- Pour 300 ml of water and knead the dough for 5 minutes, first with a spoon and then with the hands.
- Fill a deep container with water and add the remaining salt. Dip the dough for 30 minutes.
- Put in a colander and place it under the faucet under cold running water. Once in a while, squeeze the dough to release the starch. Proceed like this until the dough has acquired an elastic consistency without losing too much volume; leaving it sit for 30 minutes.
- Pour the broth in the pressure cooker; place the dough in the steam cooking basket and place it in the pot. Allow it to pressurize and as soon as the steam begins ringing, cook for 10 minutes. Turn heat off, wait for the steam to escape and open the pot.
- Let the seitan cool and, if you wish, slice and fry it with olive oil and soy sauce.
